Lentil & Quinoa SALAD

Perfect for on the go this recipe is made using the versatile Lentil and Quinoa match.

LENTIL & QUINOA

 Ingredients Measurements  Amount
Brown Lentils Cup 1
Quinoa Cup 2
Fresh Thyme Branch 3
 SALAD
 Ingredients Measurements  Amount
Avocado Large Half
Cucumber Large Half
Mixed Peppers Cup 1
Red Cabbage Cup 1/2
Spinach Cup 1
Tomato Medium  1
Sweetcorn Cup 1
Lemon Large Half
Salt Too taste
Pepper Too taste
Avocado Oil Too taste

LENTIL & QUINOA
On the hob
1. Rinse and place both ingredients into a pan covering with water above 2cm.
2. Add Salt, Pepper and Thyme (remove thyme branch when cooked)
3. Place a lid and boil on a medium heat. Stir and add more water if necessary during cooking until soft

Easiest
1. Rinse and place both ingredients into rice cooker with water above 2cm.
2. Add Salt, Pepper and Thyme (remove thyme branch when cooked)
3. Pop in a rice cooker, cover with the lid and let it do the work!
4. Stir and add more water if necessary during cooking until soft
5.  Still not soft? You may have to adjust rice settings back to the ‘cook’ function

SALAD
1. Dice avocado and chop salad ingredients
2. Add into a large bowl
3. Season with Salt, Pepper and squeeze of lemon juice
4. Once lentil and quinoa is cooked and cooled down
5. Add to Salad mixture
6. Drizzle with Avo Oil and a squeeze lemon giving it a stir

***BONUS***
Cheeky  Balsamic Glaze Dressing 
1. 1/4 Cup Balsamic Vinegar in a bowl
2. A Squeeze Agave Nectar and stir
3. Drizzle over salad
