Right now Parsnips are in season and they are just uber tasty with Carrots when roasted.

Peel and wash vegetables
- Chop in half horizontally and carefully cut each half into 3
- Line a baking tray with grease-proof paper and drizzle with Extra Virgin Olive Oil and sprinkle with Sea Salt
- Bake on a medium heat in oven until golden brown
