Sweet Potato & Plantain Burgers

Super Simple deliciously filling!

 Ingredients Measurements  Amount
Sweet Potato Large 1
Plantain Large Half
Garlic Clove 1 1
Sea salt Too taste
Black peppercorn Too taste 2
Paprika  Too taste  –
Olive Oil Teaspoon 1
Mixed Seeds (Chia, Flax, Hemp) Teaspoon 3

Directions: Double, Triple or even Quadruple recipe for more

  1. Wash Sweet Potato and cut into quarters
  2. Boil sweet potato until soft
  3. Remove skin off Plantain cut into chunks and boil
  4. Once soft cool both down and remove the skin off the potato
  5. In a bowl mash together the ingredients and add mixed seeds
  6. Season with Sea Salt, black pepper, olive oil, paprika
  7. Finely chopped garlic clove
  8. Line a baking tray with grease proof paper
  9. Roll into 4 balls then flatten mixture with the palm of your hand
  10. Make them as big, little, thick, thin as you want
  11. Bake in oven on a medium heat until golden brown
  12. This shouldn’t take no longer than 15 minutes but keep an eye on it.*

*More mixture requires more time

Then tuck in!! We used food doctor pitta breads stuffed with spinach,tomato and cucumbers smothered in hummus YUM!
