Green Grain Mix

Warmer days are here in the U.K some how meal prep doesn’t seem as appealing when you’d rather be anywhere else but the kitchen.

This quick and easy inspired recipe should help you with that.

If you want to make bigger portions or save money you can buy individual packs of vegetable and buy uncooked Quinoa.

 Ingredients Measurements  Amount
Minted Tenderstem Broccoli & Asparagus n/a 1
Merchant Gourmet Microwave          Ready to eat Red & White Quinoa 250g Cup 1
Sainsbury’s Cracked Bulgur Wheat 500g  Cup 1
Mint leaves n/a 6 leaves(To taste)
Lime Medium 1/2
Seasonings- Sea/Himalayan Salt, Crushed Black Peppercorn n/a To taste
Seeds (Pumpkin, Flax, Chia, Hemp n/a To taste

Directions

  1. Cook bulgur wheat according to pack instructions
  2. Add cooked Quinoa
  3. Squeeze half a lime
  4. Wash veg and add peas and kale to the Bulgur & Quinoa mix*
  5. Add mint leaves and seeds
  6. Season to taste
  7. Mix all together

There you have it an easy side dish or a main served with salad. That can be eaten hot or cold.

*Oven,boil, steam the remaining veg. Throw away the butter that comes in the veg pack you don’t need it!
