Butternut Squash Stew

Try this easy Winter Warmer recipe for lunch and dinner meal prep.

Suitable for Vegans

 Ingredients Measurements  Amount
Sainsbury’s Soup Mix, Butternut Squash 240g 1
Sweet Potato Medium 1
Pumpkin Medium 1/8
Corn 1 Cup  –
Kale 1 Cup  –
Mixed Peppers 1 Cup  –
Tomato – Medium Medium 1
Coriander 1/4 Cup
Garlic cloves crushed  – 2
Sea Salt  3 tsps  –
Crushed Peppercorn  4 tsps  –
Jeera/ Cumin crush  3 tsps  –
Vegetable Stock  1 cube  –

Directions

  1. Wash Vegetables
  2. Boil Pumpkin & Sweet Potato until there is a little bit of firmness left.
  3. When boiled cool down and remove skin
  4. Chop into smaller chunks and add to butternut squash then mix together
  5. In a pan lightly fry the butternut squash and onions until it is nearly cooked so there is a little bit of firmness left.
  6. Add seasonings and mix all together
  7. Boil a tomato to remove the skin
  8. Chop and add to mixture
  9. Add 1/2 pint of water
  10. Add the rest of the ingredients
    • Vegetable Stock
    • Chopped coriander
    • Sweetcorn
    • Mixed Peppers
    • Kale

12. Boil for 5 mins add water for desired consistency.
