Pineapple Boats

This quick an easy recipe is a yummy must!
Perfect if you want to impress.

Suitable for Vegans

Ingredients
1 Medium sized pineapple
1 Onion
2 Garlic Cloves
Coconut Oil
Grains/Pulses/Salad
Mixed Vegetables (Frozen or Fresh)

Directions

  • Fry off a whole onion  2 garlic cloves in Oil,
  • Season to taste I used salt,pepper, paprika, chilli flakes
  • Add your desired amount of vegetables
  • Capiscum/Mixed Pepper

Pineapple Plates

  • Sharp Knife and cut in half Be careful!
  • Scoop out the middle and cut into chunks
  • Add pineapple to vegetable
  • Simmer on a medium heat until veg is cooked and all flavours have fused together

Serve with a some healthy grains, pulses or salads

Additionally you can add responsibly sourced prawns or organic chicken breasts
