1 Medium sized pineapple
2 Garlic Cloves
Mixed Vegetables (Frozen or Fresh)
- Fry off a whole onion 2 garlic cloves in Oil,
- Season to taste I used salt,pepper, paprika, chilli flakes
- Add your desired amount of vegetables
- Capiscum/Mixed Pepper
- Sharp Knife and cut in half Be careful!
- Scoop out the middle and cut into chunks
- Add pineapple to vegetable
- Simmer on a medium heat until veg is cooked and all flavours have fused together
Serve with a some healthy grains, pulses or salads
Additionally you can add responsibly sourced prawns or organic chicken breasts
