Triple C- Soup

Pressed for time this quick Carrot,Coconut, Coriander soup recipe to the rescue it can also be frozen for a later date!
5 Medium Carrots
1/4 Cup of Coriander 
Teaspoon Thyme
Sea Salt
Black peppercorn
Medium Sweet Potato
1 Cup of Coconut milk
Fill a medium sized pan with 3/4 water and put to boil on a medium heat
Wash,peel and chop carrots and sweet potato
Add sweet potato and carrots to boiling water
Then add seasoning
When the vegetables are al dente
Add a tablespoon of milk
Add coriander
Pour it all into a blender
If your pressed for time eat up and enjoy!
Alternativley put back into the pan to cook for a further 5 mins.
Now its ready for serving sprinkled with some coriander
