Hummus Chicken

Why not nip those take-away cravings in the bud and try this healthier alternative.
Hummus usually has a 2 day life span once opened and if you should find yourself with some left over why not smother it over some chicken breasts or fish and it serve it up with some rosemary oven baked sweet potato chips or .
Ingredients (Quantities are up to you!)
  • Sweet Potato
  • Rosemary
  • Healthy Oil
  • Chicken/Fish
  • Hummus
Directions Chicken/Fish
  1. Wash meat/fish
  2. Smother with hummus
  3. Sprinkle black pepper
  4. Add chopped clove or garlic/garlic sprinkles
  5. Put on a non-stick baking tray and cover the top with foil
  6. Place on middle shelf on a medium heat
  7. When cooked remove foil for browning and crisp
Directions Chips/Fries
  1. Skin on or off totally up to you
  2. Wash thoroughly if leaving skin on
  3. Slice into chips/fries
  4. Drizzle lightly with a healthy oil (olive, coconut)
  5. Add Salt
  6. Add fresh Rosemary approx 2 teaspoons per potato
  7. Place on non stick baking tray
  8. Medium heat in oven
  9. Wait for crisp and brown. Yum!
